The event will feature winners from previous years including ten leading chefs and three star butchers who will each cook with 14 different heritage breed pigs this summer.

“We are delighted to host the first Cochon 555 All-Star event and look forward to welcoming this talented line up of chefs to Las Vegas this summer,” says The Cosmopolitan of Las Vegas CEO John Unwin. “Our food and beverage program is an integral part of The Cosmopolitan experience, so this partnership is ideal for us.”

The ten chefs – past winners and fan favorites – will work together to prepare a ‘snout-to-tail’ menu from heritage breed pigs sourced in their local markets and then flown to Las Vegas for this ultimate pork tasting.

Participating chefs and butchers include Joshua Applestone of Fleisher’s Meats (NY), Mary Dumont of Harvest (Boston), Duskie Estes & John Stewart of Zazu (Sonoma), Ryan Farr of 4505 Meats (SF), Devin Knell of French Laundry (Napa), Mark Ladner of Del Posto (NYC), Amelia Posada and Erika Nakamura of Lindy & Grundy (LA), Michael Sullivan of Blackberry Farm (Walland, TN), John Sundstrom of Lark (Seattle), the 2010 "King of Porc" David Varley of Michael Mina (San Francisco) and the 2011 Grand Cochon winner to be chosen at the Food & Wine Classic in Aspen. It will be a real treat for the fans. It’s a can’t-miss brawl and we’ve got it!”

The gritty pair are both known for their penchants for pulling off upsets against top-rated prospects. Molina was last seen in March fighting to a draw with Lara, that most observers felt he won. In January of this year, Conyers beat highly touted James De la Rosa by unanimous decision, dropping him three times.

Scheduled for the undercard are undefeated Cuban super featherweight Rances Barthelemy (11-0, 9 KO's), and Texas lightweight Hylon Williams Jr., (13-0, 3 KOs) in separate bouts.

The Cosmopolitan proudly presents another uniquely glamorous evening of world-class professional boxing; and this time, overlooking the heart of the Strip on the open-air multilevel deck of the city’s most fabulous luxury pool, The Boulevard Pool. Tickets are on sale now and are priced at $50, $150 and $250 for the VIP experience, which includes a private section with comfortable seating and complimentary cocktails. Special Cabana packages also are available. Tickets are available for purchase at www.cosmopolitanlasvegas.com or by calling 877-551-7776 or 702-698-6880.
