The Las Vegas Hospitably Association&rsquo;s (LVHA) July buffet breakfast meeting with Chef Rick Moonen as guest speaker at his famous RM Seafood Restaurant in Mandalay Bay on Thursday, July 28, 2011 was also a fundraiser for Three Square.<br /> <br /> LVHA member brought non-perishable, child-friendly foods and donated 201 pounds of food. Chef Moonen stayed after the meeting to sell and sign his cookbook &ldquo;Fish Without A Doubt: The Cook&rsquo;s Essential Companion&rdquo; and donated a portion of the proceeds to Three Square.<br /> <br /> Chef Moonen is an advocate for sustainable fishing and seafood. His passion for conservation has led him to national acclaim and it all started by accident. He was a young chef in New York City at a time before chefs were celebrities. He and a click of chefs as he said were gathered for a tourism event when a reporter asked about genetically engineered foods. His answer, &ldquo;I think Mother Nature does a fantastic job,&rdquo; was a sound bite that resonated to nationwide portions and began his claim to fame. This resulted in a Chefs Coalition for the Pure Food Campaign back in 1992.<br /> <br /> As an industry leader, Chef Moonen has testified for environmental and sustainable policy issues in Washington, D.C. and New York. He is a founding member of the Seafood Choices Alliances, which named him &ldquo;Seafood Champion&rdquo; in 2006, as well as an active member of the Wildlife Conservation Society, Seaweb, and a chef's advisory board member of Ecofish.<br /> <br /> Chef Moonen is most famous for his memorable appearance in 2009 as a contestant on Bravo&rsquo;s hit TV series &ldquo;Top Chef Masters,&rdquo; followed by a stint as a judge on &ldquo;Top Chef Las Vegas&rdquo; where his eponymous restaurant served as the location for the show&rsquo;s popular &ldquo;Restaurant Wars&rdquo; episode &ndash; which led to an invitation to participate in the second season of &ldquo;Top Chef Masters&rdquo; where Moonen finished as runner-up and raised $22,500 for Three Square, a local non-profit organization with many programs to feed the less fortunate in our community.
The Las Vegas Hospitably Association (LVHA) has given more than $250,000 in the past five years for scholarships and programs at the College of Southern Nevada (CSN). When the culinary arts students were in need of travel expenses to compete in Texas, the LVHA stepped up and donated the funds for the event. As a &ldquo;thank you,&rdquo; the students and faculty of the Culinary Arts Department and the Junior Hot Food Teams of 2010 and 2011 prepared an extraordinary competition showcase meal at Russell&rsquo;s Restaurant at CSN&rsquo;s Cheyenne Campus for the LVHA Board of Directors.<br /> <br /> The four-course meal that was prepared and served will be the same presentation that the culinary team will duplicate at the regional competition in Scottsdale, Ariz., April 30 and 31. The CSN culinary team went to regional in Albuquerque, N.M., last year and won a Silver Medal and has won the state competition 16 years. For 14 years, John Metcalfe, director of culinary arts, was the team&rsquo;s coach until two years ago when he became their manager. Chef Levi Acosta, who has been with the college more than eight years, is now the coach.<br /> <br /> In the spring and fall terms, culinary arts students prepare the food while food and beverage management students manage and operate Russell's Restaurant all under the supervision of CSN's qualified faculty. The dining room when it is open is considered a &ldquo;lab&rdquo; where lunch is served Tuesday-Thursday from 11:45 a.m. &ndash; 12:45 p.m. and dinner on Thursday night from 5:45 &ndash; 6:45 p.m.<br /> <br /> A major focus for LVHA is to raise money for scholarships to aid students going into the hospitality industry.

He will donate a portion of the proceeds of the sale to Three Square, a local non-profit organization with many programs to feed the less fortunate in our community.<br /> <br /> In addition, LVHA will be holding a Three Square food drive. Attendees who bring a bag of non-perishable, child-friendly foods such as Vienna Sausage, single serving cereal boxes, fruit cups, trail mix, breakfast bars, etc., will get a raffle ticket for prizes that day.<br /> <br /> Cost is $35 for members and $45 for non-members. <div style="text-align: center;"><span style="font-family: arial,helvetica,sans-serif; font-size: 12px;"><span style="color: black; font-weight: bold; text-transform: uppercase;">This year&rsquo;s gold tournament is sold out</span></span></div> <span style="font-family: arial,helvetica,sans-serif; font-size: 12px;"> LAS VEGAS &ndash; May 26, 2010 &ndash; The Las Vegas Hospitality Association&rsquo;s (LVHA) is holding its annual scholarship fundraising golf tournament at Bali Hai Golf Club on Thursday, May 27, 2010. This year&rsquo;s event is sold out with members and non-members participating at the 18-hole course. The event will start with lunch and registration at 11:30 a.m. followed by a shotgun start at 1 p.m.<br /> <br /> For non-golfers, there are golf lessons with PGA Master Professional Mike Davis at 5:15 p.m. and a reception for everyone at 5:30 p.m. Cost for the reception only is $40. There will be many raffle prizes that will include complimentary foursomes at prestigious courses. There will also be a chance to win a car from Audi.<br /> <br /> Over the past 20 years, the LVHA has raised more than $750,000 for scholarships and charities for the Southern Nevada community. Last year&rsquo;s golf tournament raised $12,000. The money was put into the LVHA scholarship account to fund: Child of LVHA; College of Southern Nevada Foundation LVHA Scholarships; Nellis Air Force Base Spouse Scholarships; and the Valley High School Magnet School College Scholarship requests. </span><br />

Purcell&rsquo;s goals as president this year are to provide &ldquo;even more&rdquo; value to the membership, meaningful networking opportunities and money for scholarships. &ldquo;It&rsquo;s truly an honor to be leading such a powerful and professional hospitality industry group,&rdquo; said Purcell.<br /> <br /> Purcell began her career with Harrah's Entertainment 19 years ago starting at Caesars Palace in catering, progressed to leisure sales and then to convention sales. In 2005, she became national sales manager for the Rio All-Suite Hotel, and in 2008, moved into the role of national sales manager for Bally's and Paris.<br /> <br /> Purcell has been a board member with the Las Vegas Hospitality Association since 2005 holding positions as director vice president of meetings, president-elect, and now president. Purcell is also a member of Meeting Planners International, Chicago Chapter, and the UNLV Alumni Association. <br /> <br /> Purcell, who was born and raised in Maui, Hawaii, graduated from University of Hawaii in 1986.
