CSN Culinary Arts Students Prepare Meal for Las Vegas Hospitality Association (LVHA) Board

The Las Vegas Hospitably Association (LVHA) has given more than $250,000 in the past five years for scholarships and programs at the College of Southern Nevada (CSN). When the culinary arts students were in need of travel expenses to compete in Texas, the LVHA stepped up and donated the funds for the event. As a “thank you,” the students and faculty of the Culinary Arts Department and the Junior Hot Food Teams of 2010 and 2011 prepared an extraordinary competition showcase meal at Russell’s Restaurant at CSN’s Cheyenne Campus for the LVHA Board of Directors.
The four-course meal that was prepared and served will be the same presentation that the culinary team will duplicate at the regional competition in Scottsdale, Ariz., April 30 and 31. The CSN culinary team went to regional in Albuquerque, N.M., last year and won a Silver Medal and has won the state competition 16 years. For 14 years, John Metcalfe, director of culinary arts, was the team’s coach until two years ago when he became their manager. Chef Levi Acosta, who has been with the college more than eight years, is now the coach.
In the spring and fall terms, culinary arts students prepare the food while food and beverage management students manage and operate Russell's Restaurant all under the supervision of CSN's qualified faculty. The dining room when it is open is considered a “lab” where lunch is served Tuesday-Thursday from 11:45 a.m. – 12:45 p.m. and dinner on Thursday night from 5:45 – 6:45 p.m.
A major focus for LVHA is to raise money for scholarships to aid students going into the hospitality industry.
