Located inside the Canyon Ranch Spa off the third-floor suite elevators in the Palazzo Hotel, the Canyon Ranch Grill specializes in lean, vegan-friendly foods made with whole grains, fresh fruits and vegetables. Dining with the chef
Las Vegas is well known for its sumptuous selection of fine dining, but that experience can be elevated for a select group of VIP clients or executives by booking a private dinner at an exclusive Chef’s Table. With limited seating and availability, this truly unique experience gets guests up close and personal with world-class chefs while they dine on cuisine that is truly divine and often not on the regular menu. Aquaknox, a seafood gem found at The Venetian, looks like an aquarium with cool blues and a water-encased wine cellar. At a private Chef’s Table that accommodates 8–12 people, Aquaknox Executive Chef Tom Moloney serves up his cool global water cuisine in seven-, nine- or 12-course tasting menus prepared especially for that night’s guests. Groups can request hand-selected wines that pair with the food.

Emeril Lagasse is undeniably an institution in fine dining and the ultimate proponent of chefs cooking directly for their diners, so a Chef’s Table is available at some of his Las Vegas restaurants. Emeril’s New Orleans Fish House at the MGM Grand offers an exciting “New New Orleans” style cooking that puts a twist on Louisiana’s classic Creole dishes while Delmonico Steakhouse at The Venetian is Emeril’s take on the grand American steakhouse. As Emeril would say, “Take it up a notch,” and have an unforgettable meal at the private or semiprivate Chef’s Tables that offer unique nightly tasting menus.

Jaleo Las Vegas at The Cosmopolitan of Las Vegas is the home of the most exclusive José Andrés restaurant in the city: é by José Andrés. With clever and creative tasting menus of more than a dozen Spanish avant-garde dishes, this intimate eight-person experience at the chef’s bar takes VIP guests on a culinary journey. In the secluded setting of é, the best products of Spain shine through with the inspiring and whimsical style of José Andrés’ culinary vision. Reservations are available for this unique experience by e-mail only and become available one month in advance.

Manhattan Chef Sam “Sammy D” DeMarco sets his guests up at an eight-person high-top table at a station next to the kitchen entrance of First Food & Bar at the Palazzo. Diners have the option of ordering off the menu or embarking on a true Chef’s Table experience by dining on the chef’s own recommendations and creations. Just let DeMarco know your budget and number of people.

Combine stunning views from the 64th floor of Mandalay Bay with the French culinary creations of Chef Alain Ducasse and you have miX. Step up even higher at the Chef’s Table, which is set off from the main restaurant in a semiprivate room with an amazing pair of views. One side’s windows overlook the Strip while the other side faces the open kitchen where diners watch the chefs preparing the meal. This special experience includes a tasting menu that includes many succulent creations by the renowned chef himself, and an optional wine pairing is available for an upcharge.

Chef Rick Moonen pays homage to the sea in the middle of the desert at RM Seafood inside Mandalay Place at Mandalay Bay. The lower-level casual bistro offers a raw bar and sushi bar while the upper level entices diners with globally inspired cuisine with whimsical tasting and á la carte menus.
